Singapore - Spanish food lovers, particularly those who enjoyed guest chef Esmeraldo Oteruelo's sumptuous representations during last year's promotion, might want to consider making reservations soon.
This year, the seafood aficionado will be focusing on his favourite things to cook as he dishes out staples with a Moorish influence. True to tradtition, there'll be the paella Morisca (Moorish seafood paella), lubina charmula (chermoula seabass), and vieras mozarabes (sea scallops with saffron sauce), to name a few. Other signature dishes to look out for at this buffet special include carrillera de ternera tajine (Moorish-style veal cheeks) and tajine de pisto manchego (vegetable stew).
